Gnocchi cacio e pepe with spinach

Ingredients

  • 500g Gnocchi dumplings

  • 4 tbsp unsalted butter

  • 120g parmesan, grated keep a bit for garnish

  • 3 tsp ground black pepper

  • Small bag baby spinach

    Prep 10 mins

    Cook 20 mins

    Serves 4 people

    Method

    • Step 1

    Cook the gnocchi in a large pan of lightly salted, boiling water.

    Drain and reserve 200ml of the cooking water.

    • Step 2

    Heat the butter in a large frying pan. Add the gnocchi, most of the cheese (leave some to garnish) and pepper as well as 150ml of the cooking water, raise the heat a little and stir vigorously until melted and the gnocchi is well coated. Add the spinach and stir until wilted; pour in more of the reserved water if you like it saucier.

    Season with a little salt. Transfer the gnocchi to bowls top with the rest of the cheese, can add some other cheese like cheddar if you like or some chilli! Serve with mixed salad or green veg.
