Method
Step 1
Heat the oven to 200C/fan 180C/gas 6. Tip the tomatoes, chilli, 1 tbsp of oil, herbs (keep a little to garnish) , sliced garlic and some seasoning in a baking dish.
Step 2
Make a gap in the middle and nestle in the feta block and add pepper to your taste
Step 3
Drizzle with the remaining oil, and bake for 35 minutes until the feta is very soft, and the tomatoes have thickened
Step 4
Whilst that is baking, cook your pasta with a bit of salt until it still has a bit of bite ‘al dente’, drain and keep 50 ml of the water
Step 5
Tip the pasta into the dish and carefully stir, the cheese and the tomatoes will turn into a thick delicious sauce. Add a bit of the pasta water if you want it to be looser. Garnish with more herbs/chilli if you like and with salad or vegetables : )
