Feta And Olive Baked Pasta

This one tray bake is a clever way of baking a tasty luxurious sauce with no fuss 


Ingredients

  • Tin chopped tomatoes or punnet of cherry tomatoes

  • Pinch dried chilli

  • Handful basil/oregano- chopped keep a bit to garnish

  • 2 cloves garlic sliced thin

  • Block feta

  • 200g pasta shapes

  • 50g black olives

  • 2 tablespoons oil 

Prep time – 10 mins

Cooking time – 35 mins

Serves 4 people

  • Method

    • Step 1


  • Heat the oven to 200C/fan 180C/gas 6. Tip the tomatoes, chilli, 1 tbsp of oil, herbs (keep a little to garnish) , sliced garlic and some seasoning in a baking dish.

  • Make a gap in the middle and nestle in the feta block and add pepper to your taste

    • Step 3


  • Drizzle with the remaining oil,  and bake for 35 minutes until the feta is very soft, and the tomatoes have thickened

    • Step 4 


  • Whilst that is baking, cook your pasta with a bit of salt until it still has a bit of bite ‘al dente’, drain and keep 50 ml of the water 

    • Step 5


  • Tip the pasta into the dish and carefully stir, the cheese and the tomatoes will turn into a thick delicious sauce. Add a bit of the pasta water if you want it to be looser. Garnish with more herbs/chilli if you like and with salad or vegetables : )
