Creamy Spinach & Lemon Spaghetti

Ingredients

  • 400g spaghetti 

  • Bag spinach

  • 3 garlic cloves 

  • Pot cream cheese 

  • ½ lemon 

  • Oil, salt, pepper 

Prep time – 10mins

Cooking time – 15mins

Serves - 4 people

Method

  • Step 1

Get the pasta on to boil in salty water. Thinly slice the garlic and fry in a big glug of oil until slightly brown.

  • Step 2

Add the spinach in handfuls to the hot oil, turn down the heat and stir until it wilts, add a bit of salt and pepper. 

  • Step 3

When its wilted down add the whole tub of cream chees, stir in & turn off heat

  • Step 4

Drain spaghetti and stir into the creamy spinach. Using the small hole part of your grater, grate the zest of ½ a lemon into the pasta and stir 

  • Step 5

Serve into bowls and squeeze a bit of lemon juice over the top plus a bit more salt and pepper. Add grated cheese or parmesan if you have it, some chilli flakes if you like heat!

Add any fresh herbs you have too-chopped  parsley, basil, dill, rocket on top would all be nice

Frozen peas or cherry tomatoes stirred into the wilting spinach for extra fancy : )
