Caponata Pasta

Ingredients

  • Jar of cooked Mediterranean veg in oil

  • Oil from jar of veg

  • Tinned toms

  • 1 big onion, chopped

  • 4 garlic cloves, chopped 

  • Any shape pasta 400g

  • 2 tablespoons raisins

  • Parmesan or any cheese to garnish

  • Basil leaves to garnish

Prep time – 10 mins

Cooking time – 20 mins

Serves - 4 people

Method

  • Step 1

Heat the oil from the veg jar and cook onions for about 8 mins to caramelise to make them really sweet then add the garlic for the final 2 mins 

  • Step 2

Tip in the tomatoes, sliced jar veg and raisins. Season well with salt and pepper and cook away until you have a nice thick sauce

  • Step 3

Meanwhile, boil the kettle. Pour the kettle full of water onto pan of dried pasta with a bit of salt and bring to the boil. Cook until the pasta has a bit of bite, drain, keeping a bit of the pasta water in a cup.

  • Step 4

Tip the pasta into the sauce with a little pasta water to loosen. Serve into bowls and top with a few basil leaves and some cheese.

Have some leftovers? Stick in the oven the next day with some extra veg (frozen peas would work well!) and some cheese on top for a tasty pasta bake : )
