Spanish Style Bean and Pepper Stew

Really simple & quick but delicious stew.  

Can be served with chicken, fish, tofu  roast or jacket potatoes & cheese

Ingredients

1 Tinned tomatoes

2 Garlic cloves chopped

1 Tinned beans (butter/cannelini/mixed)

1 Medium onion chopped

1 Yellow pepper chopped

1 Teaspoon dried oregano/paprika/smoked paprika (dried chilli too if you want a kick)

Handful of basil to garnish

Optional: you can also add chicken or tofu

Serves 4 people

Method

  • Step 1

    On a low heat fry the chopped garlic & onion until soft. Add the herbs & spices & fry adding a bit more oil if it sticks, fry until aromatic for a couple more minutes (you could also add chicken or tofu now too!)

    • Step 2

      Add the yellow pepper, chopped tomatoes & beans. Simmer on a low heat for about 15/20 mins. Add a bit of boiling water if sticking

    • Step 3

      Serve in bowls with a bit of cheese on top if you have it & basil leaves. 

      A great side dish for roast chicken, fish, or jacket potatoes : )
