Penne Pomodoro With Basil & Rocket Salad

Ingredients

  • Tin chopped tomatoes

  • 1 white onion, chopped

  • 1 carrot, chopped

  • 2 celery stick, chopped

  • 2 cloves garlic, chopped

  • Basil leaves

  • Salad leaves 

  • Oil

  • Salt and pepper

  • 500g penne pasta

Prep time - 15 mins

Cooking time - 30mins

Serves - 4 people

Method

  • Step 1

Bring a large pot of water to the boil with a teaspoon of salt

  • Step 2

Meanwhile chop the onion, garlic, carrot & celery sticks into very small chunks then cook on a medium heat with a glug of oil for 10 mins with a lid on so that they steam slightly. Add the tin of tomatoes and a pinch of salt and pepper and cook for a further 20 mins on a low heat.

  • Step 3

Get the pasta in the boiling water and cook for 12 mins. When ready drain off leaving a tiny bit of the pasta water in the pan with the pasta.

  • Step 4

Pour in the sauce to cover all of the pasta on a low heat and give a good stir to get it hot all the way through, then spoon into bowls 

  • Step 5

Sprinkle the basil leaves on top of each pasta bowl and some cheese if you have it. Serve the salad leaves in a bowl to share with some vinegar, oil, salt & pepper.
