Creamy Baked Gnocchi with Sweet Potato And Spinach
Ingredients
• 500g Gnocchi dumplings
• 2 garlic cloves crushed
• 2 tablespoons oil olive if you have/any oil
• 2 medium sweet potatoes or 1 large (could be squash/pumpkin)
• 1 small tub mascarpone or cream cheese
• Bag baby spinach
• Tea spoon nutmeg
• Optional handful breadcrumbs (quick recipe on the back make ahead of cooking)
• Grated parmesan
Prep time – 20 mins plus making breadcrumbs if you want to
Cooking time – 30 depending on oven/microwave/oven
Serves - 4 people
Method
Step 1
Peel and chop the sweet potatoes into small chunks. Put in heat proof bowl with a
splash of water, salt and pepper into the microwave on high for 6 mins. You could
put into air fryer if you have one- with oil for 12 mins. If you have neither can roast in
the oven at 180 for 30 mins.
Step 2
Pour the oil and garlic into into oven proof frying pan if you have one or can transfer
to oven dish once it’s cooked off. After one minute of stirring the garlic on medium
heat add the bag of spinach and cook down until wilted
Step 3
When the sweet potato chunks are tender mash half of it in a bowl with a fork. Stir it
into the pan with the spinach and the tub of mascarpone. On a low heat stir and add
150ml of water, keep stirring until you have a smooth creamy sauce. Add the nutmeg
and parmesan, then the rest of the sweet potato chunks and the gnocchi. Stir gently
until its all heated through, add a splash of water if too thick.
Step 4
Transfer now to an oven proof dish if your frying pan can’t go under the grill. Add the
breadcrumbs and grill for a few minutes until golden. Do keep an eye so you don’t
burn your breadcrumbs. Serve in a bowl on its own or with a side salad. Could add
herbs or chilli to taste. Enjoy! x
Breadcrumbs- use very stale bread will be better : )
These are for ease recipes without a food processor- if you have one you can make nice
smooth breadcrumbs quickly any of these ways
Oven
Toast 2 or 3 slices for 15 mins
Airfryer
Toast 2 or 3 slices for 5 mins
Let it cool down, stick inside a ziplock bag and bash with a rolling pin until nice and ground
down.
Could. Add 1⁄2 teaspoon of dried herbs if you fancy
If you have lots of stale bread you can make lots and freeze to use later
